Oatmeal Cookie Muffins

After the just so-so chicken, Cooking Light has redeemed itself with this recipe: Whole Wheat Oatmeal Raisin Muffins. It appears in The Best of Cooking Light 8.


Because I didn’t buy dates for this and some scoundrel child Tartlet 2 ate all the dried cranberries, I used dark raisins, white raisins, and dried apricots for the fruits. They taste like oatmeal cookies. Yum!

  1. When I end up with something that’s a cross between a cookie and muffin, they become cookuffins…. plus it’s fun to say.

  2. I made these yesterday and they are delicious! My children disagree which means more for me . . . good and bad.
    I like Brilynn suggestion about putting cookie and muffin together to form a new name . . . but I must admit I like “muffies” better.
    Keep up the test kitchen at your house, we’re enjoying the great recipes that you suggest!
