Recipe of the Day — Whoopie Pies (Chocolate Gob Cookies)

More like, I *wish* this were the recipe of the day here. I LOVE these cookies but I rarely make them b/c they are such a hassle with the frosting/sandwiching and wrapping. But it’s just as well I rarely make them since I’d be the primary eater 😀

I hope you all had a pleasant Christmas that included a lot more than opening presents. Isaiah543posted part of his Christmas sermon yesterday — go read it if you didn’t get to hear it in person! 😉

Whoopie Pies (Chocolate Gob Cookies)

2 cups sugar
2 eggs
½ cup shortening
1 cup boiling water
4 cups flour
2 teaspoons baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup cocoa
3/4 cup soured milk
1 teaspoon vanilla
Cream Filling (recipe below)

Cream together sugar, eggs, and shortening. Add boiling water slowly. Sift together flour, soda, baking powder and salt and add slowly to creamed mixture. Add remaining ingredients, except filling. Batter will be stiff — it must stand up; if it does not, add flour.

Drop by teaspoonful on greased cookie sheet. Bake 5 minutes at 375 F. Do not allow to brown but the cookies should be firm. Cool completely.

Cream Filling:
2 cups powdered sugar
½ cup butter
1 teaspoon vanilla
add enough cream to make spreadable

Make sandwiches of the cookies with 1-2 teaspoons of filling between them.

Notes:
To store the cookies, wrap individual sandwiches in plastic wrap (this is a pain, but necessary!). The cookies will be rounded on the top and bottom and won’t stack well but they usually don’t last long! I think this makes about 4 dozen sandwiches.
