Cooking Tip of the Day

I’ve gotten several search hits on ‘muffins crisp top’ and variations of the same.  So today’s cooking tip is how to make a muffin have a crisp top.  There are two rather simple methods:

1. Increase your oven 25 F — this will decrease your total cooking time by a minute or two and make your muffins crisper, or

2. sprinkle the top of your raw muffin batter with 1/8 to a scant 1/4 teaspoon of granulated sugar before baking.  This will make a crisp coating on the top and give it a golden sheen when baked.  For those who ate the raspberry or blueberry muffins I sent along for snacks for Free Life today, there was a bit of sugar on the tops of those muffins.  It’s an especially nice technique for making an otherwise not-so-sweet batter *seem* sweet b/c the sugar is on the surface.
